If you are looking for a scrumptious dessert that takes very little time then here it is. Blueberry Trifle, Nigella Lawson style (it’s not her recipe though).
Ingredients:
250g Blueberries, 25g Caster Sugar, 2 tbsp Creme De Cassis, 2 Blueberry Muffins, 500g Fresh Vanilla Custard, 284ml Double Cream, 2 tbsp Flaked Almonds.
Method:
Put blueberries in a small pan, reserving a handful for decoration. Add the sugar, cassis and tbsp of cold water. Place over a low hear and stir until the sugar has dissolved. Cook for 2-3 minutes until the berries start to burst. Leave to cool down.
Roughly chop the muffins into a bowl. Spoon over cooled berries and their juice, then spoon the custard over the top.
Using and electric or hand whisk, whip the cream until thick. Spoon the cream over the custard and decorate with the reserved blueberries and almonds.
Viola, ready in 15 minutes.
