Come Dine With Me Part 2

Day 2 of my quick and easy dinner party menu of Starter: Stuffed Portabello Mushrooms, Main Course: Salmon and Artichoke En Croute, Dessert: Heartache Chocolate Cake. 

Yesterday we did starters. Today we are on the main course.

Salmon and Artichoke En Croute as provided by a supermarket recipe card.

Ingredients: 2 large skinless salmon fillets weighing 400g (or 6 little fillets), 300g artichoke hearts (you can find this in a deli or in the chilled section of a supermarket), 125g of spreadable goats cheese, 500g puff pastry and 1 egg.

Method: Preheat oven at 180 degrees. Put your fillets skin side down and spread the goats cheese. Sprinkle seasoning (salt and pepper) and place the artichokes on top. Spread the other fillet with goats cheese and lay on top. In a hot pan, sear the salmon with a little olive oil. Leave to cool and then wrap the pastry around the salmon. Be sure to score the top and brush it with egg. Place in the oven for 30 – 40 minutes.

Serve with salad or  roasted new potatoes and fine beans.

It really is delicious.
