During this week, we have given you recipes for “Stuffed Portabello Mushrooms” and “Salmon Encroute“.

Today is the final recipe for this no fuss delicious dinner party menu….

Heartache Chocolate Cake adapted from a recipe by Harry Eastwood from Red Velvet Chocolate Heartache.

This delicious chocolate cake with an unusual ingredient is full of surprises.

Ingredients: 2 Aubergines (weighing roughly 400) 300g best dark chocolate, 50g, cocoa powder, 60g ground almonds, 3 eggs, 200g clear honey, 2tsp baking powder, salt, 1 tbsp brandy.

Method: Preheat oven to 180 degress. Puncture holes on the aubergine and steam them. An easy way is to cover them in a bowl and put them in the microwave on a high heat for 8 minutes. Leave to cool briefly and discard any water at the bottom of the bowl.

Next, skin the aubergines and then puree them. Melt the chocolate, add it to the puree and fold it in.

Separately, mix together the other ingredients and then add the chocolate and aubergine puree. Mix vigorously.

Pour mixture in a greased cake tin and cook in the oven for 30 minutes.

The smell of warm chocolate will ooze through your home.

Serve with cream or vanilla ice cream.
