Red Onion and Feta Tart recipe.
- Ready rolled puff pastry
- 2 onions
- 1/2 pack of feta
- 100g black pitted olives
- 2 tbs muscovat sugar
- 2 tbs balsamic vinegar
Preheat oven to 180 degrees.
Slice the onions and soften in a knob of butter. Cook for 8 minutes until softened and then the add sugar and vinegar. Cook for a further 5 – 8 minutes until the mixture has become syrupy.
Roll out the puff pastry on a baking tray. Spread the onions over the pastry coating it evenly. Scatter feta cheese and olives over the onions.
Bake in the oven for 15 – 20 minutes until the pastry is golden.
Slice and serve with some rocket.
Delicious…… and only takes half an hour!
