Festive Food: Chocolate Mousse

Recipe

  • 225g 75% cocoa chocolate
  • 125g butter
  • 170ml double cream
  • 2 large eggs
  • 2tbs golden honey
  • pinch of salt
  • 2tbs of amaretto (optional)

Melt the chocolate in a bowl over a pan of simmering water. Once melted add butter.

In another bowl, whip the double cream into soft peaks. Not too stiff.

In another bowl whisk the eggs and honey until light and fluffy with lots of bubbles.

Stir alcohol into the chocolate and fold chocolate and cream into the bowl with eggs and honey. Make sure you are folding. The mixture should not be stiff but like a thick paste. If you need to whip it more then do so but be careful not to overwhip.

Put mixture into bowls and chill for an hour.

Serve with raspberries and a little whipped cream.

Delicious.
